So…who’s relieved all those holidays are over? I know I am. Less food to cook. Life back to normal. Time to diet, am I right?
I was all set to post a couple of new recipes here, including some fabulous new desserts and an amazing new side dish for shabbos. But then I was thinking. If most of you are trying to eat better after the holidays, I should probably help you out with some healthy recipes, right?
With all of the I’ve been sharing lately, combined with the phenomenal treats in my cookbook, , it’s easy to forget that the archives here at Overtime Cook are jam-packed with recipes that are easy, delicious and healthy. That’s how I cook, for myself. No fuss, nothing too fancy. Just yummy food that you can make in limited time, that your family will love. Plus, as a life-long dieter, I decided to share a few of my favorite tips with you. So scroll down and enjoy!

But in order to help you, I figured I would point out some helpful links and favorite recipes – and help you find the easy, healthy recipes on my site.
For starters, round-ups:

(Not all of these are healthy, but many are, and it’ll help all of you vegetarians!)
Now, I wanted to share a few of my favorite recipes that are both healthy and easy!

Veggie Sides: [Diet Tip: I find it easiest to stick to a diet when you have lots of delicious food, and thus you don’t feel deprived. Make plenty of a yummy veggie side, and don’t feel bad about taking lots of it. Most – or even all – of the sides mentioned below can get their oil cut, if your plan doesn’t allow for the amount the recipe calls for.]
(save time by using baby carrots, halved, instead of cutting carrots)
(save time by using frozen crinkle cut carrots)
(save time by using minced, dried onions, instead of cutting a fresh one)
(use other veggies, such as peppers and eggplant, in the same marinade)
(not the easiest dish listed, but worth a mention because some of you may be cutting out pasta!)

Breakfast: [Diet Tip: Start the day right and stay on track for the whole day. I know, it’s a total cliche, but there’s a good reason that breakfast is the most important meal of the day! I actually like the following recipes cold, so you can make them the night before and enjoy on the go.]

Baked Goods and Drinks: [Diet Tip: These recipes might sound contradictory to healthful eating, but if you feel a need to treat yourself, realize that you don’t have to go overboard with a calorie-laden recipe. These muffins and baked goods are a great way to enjoy something on the sweet side, without feeling the guilt. Additionally, drinks are a great way to treat yourself without breaking the (calorie) bank. C’mon, you’re totally worth it!]

Soups: [Diet Tip: Soups are the best diet-aid! Before you dig into your meal, enjoy a bowl of filling soup, and you’ll eat way less. My best soup-related tip is to make a big pot of your favorite and freeze it in individual portion sized containers. That way, when you don’t have time to make yourself a healthy option at supper, or you need a filling and healthy lunch, you pull one out and microwave it, and you’re all set.]

(this soup isn’t the easiest, because it requires lots of cutting, but it’s so filling that it’s worth a mention.)
(use frozen squash for a super-easy soup!)

Salad:
Lots of salad ideas to choose from –! One of my favorite diet tricks is to keep a container of delicious salad dressing in the fridge, and pull it out whenever you want a great salad. Here’s my go-to, . Another trick is to use this veggie-based as a dressing. You can add a little bit of low-fat mayo, or simply use it as is!

Mains: [Diet Tip: I’ve chosen family-friendly recipes that just happen to be healthy, so you can enjoy them without having to cook twice. If you are cooking separately for yourself, plan smartly. Marinate a few pieces of chicken, then grill one each night for a fresh supper.]

(if you’re cutting out carbs, you can make the chicken and mushrooms, then eat them over lettuce as a salad instead!
(easy enough for weekdays, nice enough for shabbos!)
(Not the healthiest option in the world, but really good as a family-friendly pasta dish that’s better than lots of other options. Serve it with a big salad!)

I’ve been following you for a while and admire both your upbeat attitude towards life (at least it sounds that way!) and your recipes.
Have you ever thought of doing a 30 day meal plan? Easy but tasty, maybe we can all join it together along with your blog?
I know I’ve been working full time with no time to plan meals or shop, my daughters have taken over and have no clue to low cal eating. I know you are not a nutritionist, but anyone who had been on a few diets knows the basics.
I would love to go along for the ride for a month with you and like minded group of women…ready to lead the way?
